Berrie Berrie Good Pancakes

These delicious quick & easy berry pancakes are packed with a punch of wonderful flavor.

  • Ingredients:
    1. White & whole wheat flour; 1 cup of each
    2. 3 Tbsp pure cane sugar; can also substitute
    3. 1 tsp sea or Kosher salt
    4. 2 cups vanilla coconut milk; we prefer Soy brand
    5. 3 Tbsp canola oil
    6. 1/2 cup each fresh blackberries & raspberries
  • Directions:
    1. Combine all dry ingredients in a medium mixing bowl, sift.
    2. Add coconut milk & oil, mix until smooth.
    3. Ladle onto hot griddle, add berries.
    4. Flip after 2-3 minutes and allow to cook another 2-3 minutes.
    5. Served with syrup or agave, butter & fresh peaches.
    6. Sprinkle with powdered sugar-optionial
