Grilled Chicken Hash

Sunday's usually seem to allow us the most time to make our bigger meals. That's why we look forward to breakfast meals like this Grilled Chicken Hash recipe.

  • Ingredients:
    1. 1/4 cup unsalted butter
    2. 1 clove garlic; minced
    3. 1 small onion; finely chopped
    4. 1 red bell pepper; finely chopped
    5. 1/4 yellow pepper; finely chopped
    6. 1/2 tsp sea salt
    7. 1/4 tsp white pepper
    8. 2 tsp Worcestershire sauce
    9. 1/2 lb Yukon gold potatoes; diced into 1/4 pieces; cooked until soft
    10. 4 boneless skinless chicken breasts; grilled & finely chopped
    11. 2 tsp fresh basil; finely chopped
    12. 4 large brown eggs-poached; be sure to poach beforehand
  • Directions:
    1. Melt butter in a large skillet over medium high heat and add garlic; saute' for 2-3 minutes until soft.
    2. Add onions & bell peppers and saute' until they also begin to softened.
    3. Mix in salt pepper and Worcestershire sauce and cook for 2 minutes.
    4. Lightly stir in cooked diced potatoes.
    5. Add chicken & 1 tsp of chopped basil; reserving remaining basil for garnish.
    6. In a separate skillet heat 1 Tbsp butter and add in 1 cup of hash; cook until golden brown; approx. 5 minutes.
    7. Place hash on serving plate. Top with poached egg & garnish with basil.
    8. Repeat process for remaining hash & eggs.
