Grilled Chicken Kabobs

Backyard barbeques are always a great time especially when there's great grub involved. Try these Grilled Chicken Kabobs at your next gathering, they're sure to be a big hit! Serve either as an appetizer or as the main course.

  • Ingredients:
    1. 6 medium sized boneless skinless chicken breasts; cubed into 1- 1 1/2 in pieces
    2. 1/2 cup extra-virgin olive oil
    3. 1/2 cup Ranch dressing; we prefer msg-free Homestyle Light by Hidden Valley
    4. 3 tsp Worcestershire sauce
    5. 1 Tbsp fresh rosemary; finely chopped
    6. 2 tsp sea salt
    7. 1 large lemon; juiced to 2 tsp
    8. 1 tsp white vinegar
    9. 1/4 tsp ground black pepper
    10. 1 Tbsp cane sugar; optional
  • Directions:
    1. In a large mixing bowl combine & whisk olive oil, Ranch dressing, Worcestershire sauce, chopped rosemary, sea salt, lemon juice, white vinegar, pepper, & sugar if using it.
    2. Let stand for 5 minutes.
    3. Place cubed chicken in marinade and completely coat each piece.
    4. Cover bowl and place in refrigerator for 20-30 minutes.
    5. Thread chicken onto skewers and place on a preheated grill brushed with olive oil.
    6. Cook for 10-12 minutes or until chicken is no longer pink and the juices run clear.
    7. Remember this can be served as an appetizer or as the main course atop a bed of your favorite rice along with grilled veggies.
