Bean Salad

The next time you find yourself needing a last minute recipe for that dinner party, try this Mixed Green Bean Salad. It's quick, healthy & very tasty!

  • Ingredients:
    1. 1 bag mixed salad greens
    2. 1 can canellini beans, drained; northern beans are also an option
    3. 1 can garbanzo beans; rinsed & drained
    4. 2 Tbsp capers; rinsed & drained
    5. 1 lemon; juiced & zest
    6. 1 Tbsp pure grade A maple syrup
    7. 3 Tbsp extra-virgin olive oil
    8. sea salt & black pepper; pinch of each
    9. 2 cloves garlic; finely minced
    10. 1/4 tsp cane sugar; optional
  • Directions:
    1. Place ingredients 4-9 and sugar if using it in medium bowl, whisk.
    2. In a separate bowl combine mixed salad greens & beans.
    3. Pour dressing over salad & beans, toss well & serve.
