Mediterranean Egg White Omelette


Our trip to Denver included a stop at Toast Fine Food & Coffee restaurant in downtown Littleton for a delicious breakfast. This Mediterranean omelette was a big hit.

  • Ingredients:
    1. 4 egg whites
    2. 1/4 cup fresh spinach
    3. black olives; approximately 1/4 cup
    4. 1 Tbsp pimento
    5. 2 slices sharp cheddar cheese
    6. sea salt & fresh ground black pepper; to taste
    7. 1 tsp butter; we prefer unsalted
  • Directions:
    1. Heat butter & or olive oil in a medium skillet over medium heat.
    2. Add spinach, olives & pimento, saute until spinach starts to slightly wilt.
    3. Pour egg whites in pan & allow to cook for 3-5 minutes.
    4. Flip omelette over, add cheese & cook for another 3-5 minutes.
    5. Fold & serve with your favorite sides.
    6. We enjoyed a side of red potatoes & an English muffin.
    7. OTG Tip: transferring omelette to an oven safe dish or pie pan and heating under the broiler for a few minutes makes for very soft cheese.
