Lemon Cake Pudding


This delicious Lemon Cake Pudding is a great choice for a that sweet tooth craving.

  • Ingredients:
    1. 1 9oz package of yellow cake pudding
    2. 1/2 cup coconut milk; we prefer Silk plain or vanilla
    3. 1/4 cup sour cream; regular or light
    4. 1 lemon; juiced & zest
    5. 2 cups mixed berries; fresh or frozen
    6. whipped topping
  • Directions:
    1. Start by preheating your oven to 350 degrees.
    2. In a large mixing bowl combine cake mix, milk & sour cream and lightly stir.
    3. Add & stir in 1 tsp of lemon zest & 2 Tbsp of lemon juice to cake mix until all ingredients are well blended.
    4. Lightly coat an 8 ceramic or glass baking dish with non-stick cooking spray and add the batter.
    5. Pour 2/3 cups of boiling water over mixture and place in oven allowing to bake for 28 minutes.
    6. Remove from oven and allow to stand for 10 minutes before serving with berries & whipped topping.
