Grilled Pineapple Mahi Mahi

Mahi Mahi is a delicious fish that can be cooked many different ways. Try this pineapple marinade the next time you're in the mood for a tender piece of flavorful fish.
(OTG Cooking Show Tip; allowing foods to marinade overnight produces the best results)

  • Ingredients:
    1. 4 medium pieces of Mahi Mahi; fresh or completely thawed if frozen
    2. 1 cup fresh pineapple juice, not from concentrate; we prefer Dole brand
    3. 1 cup fresh cut pineapple, quartered; we purchase ours pre-cut in our grocers produce dept.
    4. 1/2 cup fresh grade A clover honey
    5. 1/2 cup Worcestershire sauce
    6. 4 cloves garlic; finely minced
    7. 1 tsp onion powder
    8. 1/8 cup Irish whiskey; we prefer Jameson
    9. 1 Tbsp light brown sugar
  • Directions:
    1. Place sliced pineapple & pineapple juice in blender or food processor & blend until smooth.
    2. Pour juice into large mixing bowl and add honey, Worcestershire sauce, garlic, onion powder, whiskey, & brown sugar.
    3. Whisk all ingredients into a marinade consistency.
    4. Place mahi mahi in large freezer bags, pour over marinade until fish is completely covered.
    5. Seal bags, rub all sides of fish through the bag and place in refrigerator until ready to use (We usually allow our foods to marinade overnight, so that the next day all we have to do is cook it).
    6. Cook mahi on a preheated grill until it begins to flake easily with a fork and is opaque all the way through, approx. 5-7 minutes each side depending on thickness.
    7. Top with a slice of fresh pineapple & serve with your favorite sides.
    8. We enjoy jasmine rice & asparagus with this particular dish.
